About This Product

Foxtail millet has been a rain-fed crop in Andhra Pradesh, Tamil Nadu, and Uttar Pradesh for thousands of years. Farmers grow it on naturally enriched red soil using the same low-input methods their families have followed for generations. After harvest, the grain is sun-dried and stone-milled into flour. This flour is mixed with water and extruded into Hakka-style flat noodle strands. No maida is blended in and no frying is involved. The noodles are slow-dried to hold texture during cooking. They cook clean, do not turn sticky if drained promptly, and pair well with stir-fried vegetables and light Indian-style sauces.

How It's Grown & Processed

Farming Method

Rain-fed dryland farming on enriched red soil across South and Central India. Crop rotation with legumes. No synthetic fertilizers are used. Harvested when foxtail heads fully droop.

Processing Method

Grain cleaned → sun-dried 4–6 days → stone de-husked → milled to flour → water mixed → extruded into Hakka noodle strands → slow-dried → sorted and packed.
