About This Product

These Hakka-style noodles are made from little millet flour sourced from rain-fed farms in Tamil Nadu, Kerala, and Chhattisgarh. Little millet is one of the lightest millets — low in calories and easy on the digestive system. The grain is sun-dried after harvest and stone-milled into a fine, cream-coloured flour. This flour is mixed with water and extruded into flat Hakka strands, which are then slow-dried. No maida is used. No frying involved. The noodles are light, slightly delicate in texture, and best suited for mild stir-fries and light sauces rather than heavy preparations. A clean, everyday Hakka noodle option.

Farming Method

Rain-fed farming on enriched soil in South and Central India. Little millet is grown as a secondary crop in rotation with pulses.. Hand-harvested by small farming families.

Processing Method

Grain cleaned → sun-dried → stone-milled into cream flour → water mixed → extruded into flat Hakka strands → slow-dried at low temperature → graded and packed.
