About This Product

Buckwheat, called kuttu in Hindi, is grown in the cool hill terrain of Uttarakhand and Jharkhand at elevations where wheat and regular millets do not thrive. Farming families here grow it without irrigation as a natural rain-fed crop. After harvest, the grain is sun-dried on open hillside platforms, stone-milled into a dark, earthy flour, and then extruded into Hakka noodle strands without any wheat or maida. Buckwheat is not a true cereal grain. It belongs to a different plant family entirely, which is why it is accepted during most Hindu fasting periods. These noodles are firm, slightly chewy, and have a distinct earthy taste.

Processing Method

Grain hand-harvested → sun-dried on open hillside platforms → stone-milled into dark flour → water mixed → extruded into Hakka strands → slow-dried → sorted and moisture-sealed for packing.
