About This Product

Foxtail millet idli is less common than rice idlis but have been made in Andhra Pradesh and Tamil Nadu for generations, particularly in households that have moved away from polished rice in their daily meals. This instant mix uses stone-milled foxtail millet flour as the primary grain, blended with urad dal flour and rice flour in a set ratio. No baking soda, no preservatives, and no artificial flavouring are used. The foxtail millet is sourced from rain-fed farms in Andhra Pradesh and Uttar Pradesh. Just add water, rest for twenty minutes, and steam. The idlis are pale golden in color, slightly lighter in texture than ragi idlis, and have a mild, clean taste.

How It's Grown & Processed

Farming Method

Rain-fed dryland farming in Andhra Pradesh and Uttar Pradesh. No synthetic fertilisers. Foxtail millet harvested at peak ripeness. Crop rotation with legumes maintained.

Processing Method

Foxtail grain cleaned → sun-dried → stone de-husked → milled to flour → blended with urad dal and rice flour in set ratio → moisture-sealed and packed per batch.

Storage Advice

Store in a cool, dry airtight container. Once opened, use within 2 months. Prepared batter should be refrigerated and used within 2 days.
