About This Product

Barnyard millet, called jhangora in Uttarakhand and kuthiravali in Tamil Nadu, is one of the most accepted grains during Hindu fasting periods. This dosa mix uses barnyard millet flour as the primary grain, blended with water chestnut flour and a small amount of rice flour to achieve the right batter consistency for thin, crispy dosas. No baking soda, no preservative, and no artificial additive is used. The barnyard millet is sourced from rain-fed hill farms in Uttarakhand and Jharkhand where farming families have grown it for generations as a vrat grain. Just add water and rest for ten minutes. The dosas are pale, slightly firm in texture, and have the mild, clean taste accepted for fasting meals.

Processing Method

Barnyard millet grain hand-harvested → sun-dried → stone-milled to fine flour → blended with water chestnut flour and rice flour in set ratio → packed in moisture-sealed pouches.
