Foxtail Millet Pasta Penne

Foxtail millet has been grown on the Deccan Plateau for thousands of years. Our farmers in Andhra Pradesh and Uttar Pradesh cultivate it using the same rain-fed, low-input methods their families have used for generations. After harvest, the grain is sun-dried on mud platforms for 4 to 6 days, then stone de-husked to preserve the bran. The flour is then extruded into penne shapes and slow-dried to hold structure during cooking. No maida is blended in. The penne cooks firm, has a clean taste, and works well with any sauce, Indian or continental.
