Finger (Ragi) Pasta Macaroni

Finger millet, locally called ragi, has been grown across Tamil Nadu and Andhra Pradesh for centuries. Farmers here use rain-fed, rotation-based methods on red laterite soil. The grain is harvested when fully mature, sun-dried for 4 to 6 days on raised platforms, then stone-milled into fine flour. This flour is mixed with water and extruded into macaroni shapes without  artificial additives. Each batch is dried slowly at a low temperature to hold shape and nutrition intact. The result is a firm, naturally dark-colored macaroni that cooks clean and holds its texture well.
