About This Product

Jackfruit pickle is a traditional preparation from Uttar Pradesh and Kerala, where raw, unripe jackfruit is available in large quantities and has been pickled for generations as a way to preserve the seasonal vegetable. Raw kathal has a firm, meaty texture and a neutral flavour that absorbs spices well. The jackfruit is cut into small pieces, briefly sun-dried to remove surface moisture, and then mixed with a blend of mustard seeds, fennel seeds, fenugreek, turmeric, red chili powder, and asafoetida in cold-pressed mustard oil. No artificial preservative, no vinegar, and no synthetic colour is used. The pickle is filled into clean containers and allowed to mature for three to four weeks before being sealed and packed for distribution.

How It's Grown & Processed

Farming Method

Raw, unripe jackfruit sourced from orchards and farm trees in Uttar Pradesh and Kerala. Harvested at the correct pre-ripening stage when the flesh is firm and green. Traditional orchard farming with minimal synthetic inputs.

Processing Method

Raw jackfruit cleaned, peeled, and cut into pieces → surface moisture removed by brief sun-drying → mixed with whole and ground spice blend → cold-pressed mustard oil added → filled into clean jars → matured 3–4 weeks → sealed and packed.

Shelf Life

9 months from date of packing

Storage Advice

Store in a cool, dry place away from sunlight. Always use a dry spoon; moisture causes early spoilage. Once opened, refrigerate and use within 3 months. Keep the oil level above the pieces to maintain preservation.
